No “creamy” filling, and NO GLUTEN!
Call me a heretic, but when it comes to Oreos, I’m all about the chocolate cookie part. I don’t want that greasy white filling, and I have been known to scrape it off into the trash. I love the deep, intense flavor of those crisp little chocolate cookies. I know, I know, we’re in the age of triple-mega-ultra-extreme-stuffed Oreos that come in 27 different flavors. But I’m a simple girl, with simple needs. I find it surprising that with all of the available options, you can’t buy just the wafers. I think Nabisco is really missing out on a market.

I really enjoy ice cream sundaes. I like the goopy, gooey kinds from the ice cream stands that are only open in the summer. Strawberry Shortcake, Tin Roof, Turtle, Banana Split, Fudge Brownie…yeah, I could keep on listing them, but you get my point. To this day, I always secretly get a little excited when we go out for ice cream; it always makes me feel like I’m a kid again. The plastic trays and little paper napkins that accomplish nothing…I love it. It’s as much about the experience and the nostalgia as it is about the ice cream. The thing is, I’m also a freeze-baby, and when the weather gets cold the last thing I want to eat is ice cream. I needed to bake.
I don’t want you guys getting the wrong idea about me – deep down, I’m all about the baking. And I realized I hadn’t posted any baked goods in quite awhile, and frankly, that’s just not cool. So as I was daydreaming about what I wanted to eat next and flipping through my scribbled-down recipes, I decided on pound cake – another one of those seriously underrated desserts that deserves its turn in the spotlight.
And I’m not talking about the ones from the frozen-food section of the grocery store. Oh no, my friends – I mean the real deal! Not only is this cake moist and rich, but you get an added bonus with the homemade version…this incredible, crispy, crust. It’s almost like a cookie-ish, candy-ish treat that melts in your mouth. Full disclosure here – the crust does make it a challenge to slice a “pretty” piece, but oh my gosh it doesn’t even matter! We may or may not have gotten into a scuffle over the pieces that fell off.
